I do so love that veggie.. and I am glad I've converted Sue into eating it. It would just be so sad to have to face an entire squash alone. (altho the ones my aunt grew are like the mini-me of squash-dom. just enough for one serving)

my 3 favorite recipes for butternut are: soup, gratin, and lasagna. I never get any complains from those dishes... and usually they are fully inhaled by the time the end of the evening rolls around. Personally I also love acorn squash. but the only recipe I have is for baked with brownsugar in it.. Any other acorn squash suggestion/recipes?? I have 2 spaghetti squash at home that I need to make something with. I once made a great marmelade with spaghetti squash and then sandwiched it in the middle of a semolina cake (greek dishes both). Maybe since I am canning this weekend I'll can the spaghetti marm and see what other people think of it.

And now that I've made zucchini chocolate chip bread I am thinking I need to make more. Personally I liked the spice I put in there (french 4 spice which had white pepper, nutmeg, ginger, and cloves in it) but Sue was opposed.. Perhaps I'll make 2 batches and not include the offending spice next time.

That was wonderful lasagna. Mmm, mmm, mmm. Um...I tend to treat winter squashes more or less the same... Have you tried soup or lasagna with acorn squash?

Squash marmalade???? I am really curious now.

that is a good point.. winter squish (yes I pluralize squash as squish) are all basically similar. I am sure I could interchange them.

I'll let you know if we end up making any spaghetti marm this yr. I just talked to ruth and she was game.

I have a great recipe for a spaghetti squash pie if you like. Essentially it is spaghetti squash steamed until cooked and then placed in a pie plate and covered with a really tasty tomato sauce and covered in cheese. Usually we end up making such a big batch that we ditch the pie plate altogether and just stick it in a casserole dish. The tomato sauce is pretty simple, but quite tasty, and could be easily modifed to add beef or chicken or even Italian sausage. Give me a call or send me an email if you want the recipe.

What is that? I went to my local market, and well I have no idea what I am looking for.

just use a good soy sauce. I must have forgotten the word soy. :) I say good b'c there is like a billion soy sauces out there including "lite" and "less sodium"

Well... I had a recipe for acorn squash baked with meat and cheese in it, but my recipe books were on the wall primarily involved in the fire :-( I seem to remember some odd spice in it, like nutmeg or something. Don't forget pumpkin -- I used to like experimenting with that.

i saw a thing on TV the other day where some Italian lady had cut acorn squash into C shapes (in half and then in strips, i guess) and had roasted them, and then drizzled them with a reduction of balsamic vinegar (i think all she did was cook it down until it got syrupy). it looked delicious.

i would kill for that lasagna recipe.
